to clarify, I'm not on either team's side, just wanted to get to the bottom of the offside rule. And after checking the official FIFA rulebook, I can say that a player who runs off pitch is still considered in play.

Yo mama does that mean you can just hold someone onside and then step off the pitch right before a ball is played? That seems a bit off to me.

There's another instance in 2008 EURO Italy vs Netherlands where the Italy defender seemed injured and runs off baseline, allowing a Netherland player scoring a goal form a forward position.

No Z. Players have to be on the pitch to be considered to be affecting play. Rules state that if a player is off the pitch, he cannot interfere with onside/offside calls. Thus the CSKA goal should not have stood.

I thought Blind's keeping the CSKA player onside since he runs out of the baseline; so as long as the player isn't behind the goalkeeper (who is now the 2nd defensive player), he is onside?

Blind was off the pitch at the time so he isn’t considered in any offside calls. This was a bad mistake by the linesman.
